| 概要 | Calcium ascorbate (AsA-Ca), a calcium salt of vitamin C, has been approved as a food additive in Japan, but its preference remains unclear. We evaluated preference for AsA-Ca in Wistar rats using a 48-h two-bottle test and compared it with CaCl₂ (0.01–100 mM). At ≥30 mM, preference scores for AsA-Ca (45.7% at 30 mM; 8.0% at 100 mM) were significantly higher than those for CaCl₂ (29.5%; 3.6%). Compared with previously reported values for AsA, AsA-Ca showed higher preference. These results indicate that AsA-Ca is more preferred than CaCl₂ and possibly AsA. The higher preference may be related to pH differences, but the mechanism remains unclear. Further studies are needed to examine the role of taste perception. |
